Papaya Strip Cookies

It’s FRIDAY and finally feeling like summertime - we believe a sweet treat is in order! Developed and made by one of our favorite collaborators, the lovely Kelsey Wolfe. These cookies are packed with heart-healthy oats and tummy-taming papaya for a summery snack that will satisfy your sweet tooth without any belly aches or sugar comas.

  • 1 Cup Oats

  • ⅓ Cup All Purpose Flour

  • ½ Tsp Cinnamon

  • ½ Tsp Baking Powder

  • ⅓ Cup Unsalted Butter

  • 1 Egg

  • ¼ Cup Amazi Papaya Strips

  • Sprinkling of Shredded Coconut


Preheat the oven to 350 Degrees.

In a large bowl combine the oats, flour, cinnamon, and baking powder.  

In a small pot melt butter over medium heat. Continue to cook until the butter solids pool at the bottom of the pan and begin to brown. Swirl while cooking and watch the butter carefully. Remove from the heat and pour into a medium sized mixing bowl. Add honey to the butter and mix until the honey is slightly melted. Add the egg. Blend the butter mixture.

Stir in some of the Amazi Papaya Strips, but leave some for topping.

Scoop spoonfuls of dough onto a cookie sheet with parchment paper and cooking spray.

Top with the remaining Papaya bites and some coconut flakes.

Bake at 350 degrees for about 12 minutes. Keep an eye on them because oven times vary.
