🍯Honey Sesame Cake🍯
1/3 cup sesame seeds
2 large eggs, room temperature
1/4 plantain chips
1/3 cup honey
1/3 cup oil
1/4 cup tahini
1/4 cup tea
1/4 granulated sugar
1/4 cup brown sugar
2 tsp vanilla extract
1/2 tsp kosher salt
1 1/2 all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
Glaze:
1 tbsp water
1 tbsp honey
6 tbsp powdered sugar

Preheat oven to 350*
Line and grease 9” square pan
Add raw sesame seeds to heat, 3-4 minutes until golden brown and fragrant, save for later
Combine oil, eggs, honey, sugar, brown sugar, tea, vanilla extract, salt. Whisk until smooth.
Sift in flower, baking powder and baking soda.
Add sesame seeds.
Bake for 30 minutes.
Top with glaze and plantain chips.

1 1/2 tsp smoked paprika
1 tsp garlic powder
1/4 tsp cumin
1/2 tsp cayenne pepper

1/4 cup coconut oil
3 cups Michele's Almond Butter Granola
1 cup mini pretzels*
1/2 cup dried cherries
1/2 cup raw pumpkin seeds
1 cup wheat square cereal (like Chex)*
2 cups corn square cereal

Coconut Plantain Crusted Cod
-Pulse equal parts Amazi Salted Coconut Oil Plantain Chips and shredded coconut in a food processor
- Dip cod in salt & peppered flour, shaking off excess, then a beaten egg, shaking off excess, then coconut plantain mixture
- Place on baking sheet and bake at 375 for 20-30 minutes, until cooked through

- Combine pineapple, cherry tomatoes, red onion, serrano chile, cilantro, and lime juice in a bowl. Taste and adjust quantities to your liking!

Coconut Rice
- Cook basmati rice according to package instructions, using coconut milk instead of water. Once off heat, stir in lime juice and chopped cilantro to your liking.

🔹1/4 c green olives chopped

1️⃣ In a skillet, heat oil and sauté onions and carrots until softened. Add garlic for a minute.
2️⃣ Add the spices and heat for a minute. Add dried fruit, olives and 1/2 c broth. Simmer until most of the broth has reduced.
3️⃣ Add the cauliflower rice and mix. Continue to cook until all of the moisture is out of the rice. Taste and add salt if needed.
4️⃣ Add the toasted almonds. Serve and enjoy.

Chocolate Cashew Crinkle Cookies
~ inspired by @lexiliveswell chocolate fudge oat cookies 💓
1 1/2 C of Almond Flour
1 C of our Salted Coconut Oil Plantains
1/4 C of Cocoa Powder
1 tsp of Baking Powder
1/4 C of Creamy Cashew Butter
1/4 C of Organic Cane Sugar
1 Egg
2 Tbsps of Almond Milk
1 tsp of Vanilla Extract
1. In a food processor, blend together the plantains and almond flour until the plantains become fine like the flour.
2. Add in all other ingredients and blend until your cookie dough forms.
3. Roll dough into cookies and place on your baking sheet. Drizzle with more cashew butter and sprinkle sea salt (optional).
4. Bake at 350 for about 15 minutes. They should come out Fudgy with a cashew crinkle on top ✌🏼
When your breakfast is so beautiful, you can't bring yourself to eat it...👏👏👏 That being said, you're going to want to try this recipe out AND give it a taste, because these crepes will not disappoint! Shoutout to @spinachdaddy for the sweet recipe and the amazing food presentation.

Chunky Monkey Blondies
Ingredients:
-15 oz can of unsalted chickpeas
-1/3 cup of maple syrup
-1/2 cup of smooth almond butter
-1 tsp vanilla extract
-1/2 tsp baking powder
-1/2 tsp baking soda
-pinch of salt
-1 2.3 oz bag of Amäzi Cocoa plantain chips
-1/3 cup chocolate chips
-1/4 cup chopped walnuts (optional)
Directions:
1) Pre-heat the oven to 350 degrees.
2) Rinse and drain your chickpeas, pat dry.
3) Pulse 2/3 of the cocoa plantain chips in a processor till chips become very small- almost the size of rolled oats, set aside.
4) In a food processor, combine the first 7 ingredients till a smooth batter is formed.
5) Stir your chocolate chips, pulsed cocoa chips, and walnuts into the batter.
6) on a small, lined cookie sheet (or a 9x9 sq pan for thicker bars!) pour batter and spread into an even layer, about 1/2 inch thick.
7) top with remaining whole cocoa chips, additional chocolate + nuts and flaky salt if so desired
8) bake blondies for 20-23 min until it passes the clean toothpick test! Let cool completely
9) optional, but super festive: using a heart shaped cookie cutter, cut out your blondies and gift to all your favorite mamas! (And snack on the remaining odd and ends yourself)

]]>Every week during the Covid-19 event we’ve been looking for fun and clever ways to use items from our pantry and/or fridge. And to make it more interesting we’ve added a fun competition—based off one of our favorite Food Network cooking shows called Chopped—that we’ve dubbed the “The Chopped Pantry Challenge.” Essentially one of us chooses four ingredients that the other has to incorporate into one cohesive meal.
This past week we turned to our Facebook and Instagram followers for inspiration and presented to them four ingredients: amäzi plantain chips, cornmeal, vegan milk and mangos.
We received multiple entries, and after whittling it down to our top two choices we put them up for a vote by our followers. The winning dish was a Sweet Plantain Cornbread Cake with a Mango Soy crème Anglaise.
So, to honor our winner, we decided to actually make their creation come to life and try it out and I’ve gotta say we were really impressed with the results. The plantain cornbread had a great cakey mouthfeel; great flavor from the combination of corn and plantains; and wasn’t too sweet. I’d dare say it was even semi-healthy thanks to the addition of a generous portion of whole wheat flour. The mango crème Anglaise really put it over the top, and gave it an extra dimension of sweetness without making your teeth hurt. All together it was definitely a dessert we could be proud of.
Hawaiian Sweet Plantain Cornbread Cake

Cinnamon Chia Pudding:
Ingredients:
1/4 cup chia seeds
1 cup milk of choice
1 tsp vanilla extract
1 tbsp maple syrup
Heavy dash of cinnamon
Pinch of sea salt
Directions:
Shake up all the ingredients in a mason jar, chill for 2 hours or overnight and top with Amäzi cinnamon plantain chips, summer fruits, coconut and goji berries!
]]>-4 to 5 slices of sourdough bread (or rustic bread of choice)
-1 cup nut or oat mylk
-1 tbsp flaxseed meal
-1 tsp vanilla
-1 tbsp maple syrup
-1 tbsp "butter" of choice (you can use any nut butter, or for a nut free option, we used Kween & Co Granola Butter)
-1/2 mashed ripe banana
-cinnamon
-1/2 cup Amäzi Cinnamon Plantain chips (ya could go crazy and try it with cocoa too!)
-1/2 cup granola of choice
-Coconut oil for pan
Mix together batter ingredients in a large bowl till thoroughly combined.
In a low dish, crush together Amäzi plantain chips and the Pulp Pantry granola. This will be the crust.
Over medium heat, melt some coconut oil in a large pan or skillet
Dip a slice of bread in your batter, fully submerge till all surfaces are covered
Dip both sides of battered toast into the crust mix, allowing the pieces to cover your bread
Cook each side 1~2 minutes in the pan till browned
Repeat for all your slices
Serve warm with maple syrup, more granola butter and all the toppings!
