Moroccan Cauliflower Rice

Look no further than this nourishing bowl of Moroccan Cauliflower Rice by the incredible duo over at @forksandtrails. We absolutely LOVE how they incorporated our Chili Lime Jackfruit Chews for a sweet and spicy twist!

𝐌𝐨𝐫𝐨𝐜𝐜𝐚𝐧 𝐂𝐚𝐮𝐥𝐢𝐟𝐥𝐨𝐰𝐞𝐫 𝐑𝐢𝐜𝐞
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
🔹1 small onion diced
🔹2 carrots diced
🔹2 cloves of garlic minced
🔹2T Olive oil
🔹1/4 c Chopped jackfruit chews
🔹1/4 c Chopped dried figs
🔹1/4 c Raisins
🔹1 c vegetable broth
🔹1/4 c green olives chopped
🔹2 bags of cauliflower rice, cooked
🔹1/2 c toasted almonds
𝘚𝘱𝘪𝘤𝘦𝘴:
🔸1/2 t salt
🔸1/2 t cumin
🔸1/2 t turmeric
🔸1/2 t cinnamon
🔸1/2 t cardamom
🔸1/2 t crushed red pepper
🔸1/4 t cloves
🔸1/4 t coriander
🔸1/4 t allspice
𝘋𝘪𝘳𝘦𝘤𝘵𝘪𝘰𝘯𝘴:
1️⃣ In a skillet, heat oil and sauté onions and carrots until softened. Add garlic for a minute.
2️⃣ Add the spices and heat for a minute. Add dried fruit, olives and 1/2 c broth. Simmer until most of the broth has reduced.
3️⃣ Add the cauliflower rice and mix. Continue to cook until all of the moisture is out of the rice. Taste and add salt if needed.
4️⃣ Add the toasted almonds. Serve and enjoy.
