Moroccan Cauliflower Rice

Look no further than this nourishing bowl of Moroccan Cauliflower Rice by the incredible duo over at @forksandtrails. We absolutely LOVE how they incorporated our Chili Lime Jackfruit Chews for a sweet and spicy twist!⁠

𝐌𝐨𝐫𝐨𝐜𝐜𝐚𝐧 𝐂𝐚𝐮𝐥𝐢𝐟𝐥𝐨𝐰𝐞𝐫 𝐑𝐢𝐜𝐞⁣⁣⁠
⁣⁣⁠
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴: ⁣⁣⁠
⁣⁣⁠
🔹1 small onion diced⁣⁣⁠
🔹2 carrots diced ⁣⁣⁠
🔹2 cloves of garlic minced ⁣⁣⁠
🔹2T Olive oil⁣⁣⁠
🔹1/4 c Chopped jackfruit chews ⁣⁣⁠
🔹1/4 c Chopped dried figs⁣⁣⁠
🔹1/4 c Raisins⁣⁣⁠
🔹1 c vegetable broth ⁣⁣⁠
🔹1/4 c green olives chopped⁣⁣⁠
🔹2 bags of cauliflower rice, cooked⁣⁣⁠
🔹1/2 c toasted almonds⁣⁣⁠
⁣⁣⁠
𝘚𝘱𝘪𝘤𝘦𝘴:⁣⁣⁠
⁣⁣⁠
🔸1/2 t salt⁣⁣⁠
🔸1/2 t cumin⁣⁣⁠
🔸1/2 t turmeric ⁣⁣⁠
🔸1/2 t cinnamon ⁣⁣⁠
🔸1/2 t cardamom⁣⁣⁠
🔸1/2 t crushed red pepper⁣⁣⁠
🔸1/4 t cloves⁣⁣⁠
🔸1/4 t coriander ⁣⁣⁠
🔸1/4 t allspice ⁣⁣⁠
⁣⁣⁠
𝘋𝘪𝘳𝘦𝘤𝘵𝘪𝘰𝘯𝘴: ⁣⁠
⁣⁠
1️⃣ In a skillet, heat oil and sauté onions and carrots until softened. Add garlic for a minute.⁣⁣⁠
2️⃣ Add the spices and heat for a minute. Add dried fruit, olives and 1/2 c broth. Simmer until most of the broth has reduced.⁣⁣⁠
3️⃣ Add the cauliflower rice and mix. Continue to cook until all of the moisture is out of the rice. Taste and add salt if needed.⁣⁣⁠
4️⃣ Add the toasted almonds. Serve and enjoy.⁣⁣⁠
